Crispy battered fish with a heavenly lemon butter sauce, ideal for drizzling or for dipping on the side.
INGREDIENTS
- 1 pouch Crispy Batter (or Tasty Tempura Batter for gluten free alternative).
- 4 fish fillets of choice -- patted dry
- 2 tablespoons butter, chilled
- 2 tablespoons lemon juice
- 1 teaspoon minced garlic
- 1 tablespoon chopped fresh (or 1 teaspoon dry) dill
- Salt and white pepper to taste
INSTRUCTIONS
- Melt butter with garlic in a warm (not hot!) pan or small pot.
- Add lemon juice, salt and pepper to the butter and stir, warming briefly over a medium heat for 2-3 minutes.
- Remove from heat and add dill and stir through.
- Batter and cook fish as per Fogdog packet instructions.
- Drain battered fillets on paper towels and serve with choice of salad or sides. Drizzle sauce over the fish or serve on the side in a dipping bowl.
