These gluten free and plant-based fritters are a great entrée or snack. The perfect combination of crispy, gooey and yummy!
Serves 2-4
INGREDIENTS
- 1 medium-sized aubergine
- Half a packet (95g) Fogdog Gluten Free Fantastic Fritter Mix
- 2 tbsp garam masala powder
- 1 tbsp cumin seeds
- 200ml (approx) sparkling water
- Handful of coriander leaves
- Salt & pepper
- Oil for frying
- 100g plain coconut yoghurt
- 1 tsp cinnamon powder
INSTRUCTIONS

In a bowl whisk together the Gluten Free Fantastic Fritter Mix, garam masala and cumin seeds with enough sparkling water to form a loose batter.
- Top and tail the aubergine, then slice widthways into 1cm thick discs.
- Heat 2-3cm of oil in a frying pan over a high heat.
- Whisk the batter again so that it is smooth and fairly runny, similar in consistency to pancake batter.
- Now fry the aubergine slices in 2/3 batches. Dip each slice in the batter and ensure both sides are coated and gently slide into the oil.
- Fry for roughly 3 minutes on each side, turning with a spatula. They’re ready when they’re golden brown on both sides.
- Place on a drying rack to let the excess oil drip off, then place on a plate. Garnish with chopped coriander and sprinkle with salt and pepper.
- Stir the cinnamon into the coconut yoghurt and serve alongside the fritters. Enjoy!
