Stuffed Jalapeño Poppers with Ranch Style Dressing

These jalapeños poppers make the perfect tasty party dish!

Ingredients (makes 24)

FOR THE JALAPEÑOS

1 cup Fogdog Premium Panko Breadcrumbs 
12  Fresh Jalapeños
250g Cream cheese
7 Rashers Streaky Bacon
1 1/4 Cup Grated Cheese
Bunch of Fresh Chives finely chopped
1 Tsp Garlic Powder
1/2 Tsp Paprika
1/2 Tsp Salt
1/4 Tsp Chilli powder (optional)
Good Scrunch Black Pepper
1 Tbsp Oil

FOR THE DRESSING

1/3 Cup Plain Yoghurt
1/3 Cup Mayo
2 Tsp Lemon Juice
1 Tsp Garlic Powder
Chopped Fresh Chives
Salt and Pepper to Taste

Method

  1. Preheat oven to 180°C fan.

    2. Line a baking tray with baking paper and place bacon down. Bake in oven for 15- 20 mins until nice and crispy.

    3. While bacon is cooking prep your jalapeños by cutting them in half lengthways and removing the seeds. Place on a separate lined baking tray and set aside.

    4. Mix your dressing in a small bowl and set aside in the fridge.

    5. Once bacon is cooked, remove from oven and chop finely into small pieces. Add 3/4 of the bacon to bowl and set the other 1/4 aside.

    6. To the same bowl add your cream cheese, grated cheese, chives and seasonings. Mix well.

    7. Stuff your jalapeños with the cream cheese mix and set aside.

    8. Place the oil in a pan and heat slightly, then add your breadcrumbs and remainder of the bacon. Toast until nice and golden, then remove from heat.

    9. Press down your jalapeños (cream cheese side) into the breadcrumbs then top with a little extra. Repeat this until all jalapeños are topped with breadcrumbs.

    10. Place the jalapeños into the oven and bake for 15-20 mins until jalapeños start to soften but not loose shape, and the breadcrumbs are nice and crispy.

    11. Serve with the dressing and Enjoy!
